Yet many restaurant wine lists still play it safe, relying on the same familiar names because they're what customers recognise and they don't have the time or energy to explore other options.

Over the years, we've been lucky enough to visit some interesting wineries across Spain. We've tasted Albariño overlooking the Atlantic in Galicia, shared long lunches in Rioja and discovered unique wines here in Mallorca. Every visit reminds us that some of the best summer wines aren't necessarily the most expensive or the most famous - they're simply the ones that suit the moment.
