The soil is not worked, following several principles of Fukuoka and others of biodynamic methods. Manual harvesting of the grapes. Destemmed and fermented at a maximum of 25ºC. Autochthonous yeasts. Maceration for 20 days. The wine remains in 100% French oak barrels, second use, for 18 months.
A rather mature wine with a hint of plum, this is a rich and fleshy wine with some nice tannins and a good length.
Great with pot roast dishes. Needs drinking soon!
