Following Fukuoka principles.  This vineyard is certified organic.  Manual harvesting of the grapes. Destemmed and fermented at low temperatures with its own yeasts.  Maceration for approximately 15 days, depending on the vintage.  The wine sits in French 225 litre casks for 8 months.

A smoky, rich wine with subtle hints of ripe black cherries, blackberries and background spices.  The palate is silky and velvety with a long array of rich, ripe dark berries.  There's a lithe and juicy feel to the finish.  It has a nicely delivered, luscious style to it.
