El Lagar de Moha's Varron is a Cuvée Especial white wine that has been aged in 600-litre French oak barrels.


The grapes for Varron are sourced from vineyards in Nava del Rey, and are cultivated using organic and biodynamic farming techniques certified by the Castilla y León Organic Farming Council and Demeter. The vines are planted in gravelly soils near the Duero River, aiding water drainage and reducing the risk of diseases. Minimal treatments with natural products like herbal infusions and plant extracts are used, avoiding herbicides entirely.


The grapes were hand-harvested, selecting only the best ones and cooling them before pressing. The must underwent fermentation in concrete tanks and was then transferred to the French oak barrels.

  • Appearance: Varron is visually bright with golden reflections.
  • Aromas: The wine recalls aromas of minerals, stone fruits, subtle smokiness, and herbal hints like fennel and thyme.
  • Palate: This is a complex Verdejo, with a creamy, silky texture and a persistent finish. It is also suitable for long-term ageing.
  • Pairing: Ideal for enjoying alone or paired with fish, seafood, pasta, rice, or white meat dishes. Varron also complements well with smoked fish like salmon, white tuna, or trout.
