S Vins is the personal project of veteran Mallorcan winemaker Carlos Rodriguez Furthmann.  His small winery is located in the Sierra Norte region of Mallorca.  His artisan wines are created using minimum manipulation and he also prioritises the use of indigenous grape varieties.  


S Vins was the pioneering winery in Mallorca and the Balearic Islands to produce a wine using spontaneous fermentation with 100% local white grapes, and minimal intervention.


S Vins P is created using a native Mallorcan grape variety and the grapes come from a vineyard in Manacor. The winemaking process involves spontaneous fermentation, with part of it kept on its fine lees for two months.  A small percentage of the wine is fermented in a Mallorcan clay amphora.  Nothing is added to the wine apart from a small number of sulphites.  This wine is not clarified or filtered. 


Production: 4900 bottles.



  • Palate: Pear, green apple, fennel, anise, and bitter almond come to mind when tasting this wine. It is mineral, fresh and light in the mouth but with an intense flavour. 
  • Pairing: Grilled chicken breast, sirloin, turnip, hake, flounder, cuttlefish and grilled squid, Andalusian squid, turkey, breaded chicken, pork chops, hummus, chickpea salad, cooked eggs, steamed mussels, salad, Mallorcan soups, and trampo... used with creativity and imagination.
