As its name implies, Kimera by LMT Wines is a wine that borders on the impossible.
This Ancestral Blanco is created according to the ancestral method of production (i.e. a single fermentation), which is a more rustic and artisanal approach than the traditional double fermented method of making sparkling wine.
This wine also reflects the terroir and the varietals used, giving it authenticity. It is aged in bottle, on its lees, for 10 months.

- Appearance: This ancestral sparkling wine does not have a persistent bubble.
- Aromas: It is a delicate, soft wine with a fresh and fruity aroma as well as an added presence of aniseed and herbs, something that is characteristic of the white grenache grape in San Martin de Unx.
- Palate: In the mouth, this wine is fresh, fun and happy, with the added mixed nuances of typical white fruits and aniseed.
- Pairing: This wine can be enjoyed on its own but it can also work well with many dishes and desserts. It is very good with grilled meats, barbecues and smoked or toasted flavours due to its character. It also works well with vegetables, legumes, stews and roasts.
