Ses Putes Pedres by Cas Quitxero is a red wine that uses indigenous grapes from Mallorca.

 

The grapes for Ses Putes Pedres have been harvested from various plots in the centre of the island. 

The plots and grapes are as follows:

Plot One - 40% Mantonegro de Santa Maria del Camí (in the area of Es Raiguer), with loam soils of Call Vermell that have a good percentage of gravel.  These grapes were harvested in mid-September.

Plot Two - 30% Callet, Fogoneu and Mantonegro de Algaida (on the way to Sencelles), with deep clay-loam soils of Call Vermell that have coarse stones.  The winemaker sought a balanced ripening of the grape varieties, which were harvested at the end of August.

Plot Three - 30% blend of autochthonous varieties harvested from old vines (50 years old) in the Algaida area at the foot of Puig Randa.  Clayey-loam soils of Blanquer dominate here.  These grapes were also harvested at the end of August.

 

The winemaker, Rafael, chose to vat and crush the grapes separately, with 25% of them being whole bunches.  Cold maceration took place until the start of spontaneous fermentation.  Manual punching down, and 10 to 15 days of fermentation (depending on the plot) at a controlled temperature of between 25-27ºC.

Rafael tasted daily to decide on the day of pressing.

Fermentation was finished without the skins and the plots were assembled in 500 litre used French oak barrels for 6 months. 

The wine was then transferred to stainless steel tanks and bottled by gravity without filtering or fining.  This wine has also been lightly sulphated.

Ageing continued for a minimum of 6 months in bottle.
