This Caiño Tinto wine is made in the same way as a white wine.  A Blanc de noir.  Short pressed and fermented in 500L barrels, where it stays for 12 months.

In the mouth this wine has charming rusticity, with a marked character.  It is a wine that is very different, but with a good structure.  A vibrant wine that is long in the mouth thanks to its tense acidity.  Perfect with a good Galician stew, bean dishes, red meats, stews and cured cheeses.  It also pairs very well with blue fish, white meat and Iberian Acorn Ham.
