Bitoku, from Adega Do Demo is a white wine made from 95% Treixadura and 5% Loureira grapes.

 

The grapes were harvested from the "As Tapadas" estate in Puga parish, Ribeiro DO, which spans three hectares facing south and has an altitude of 280metres (considered medium-high in the Ribeiro region). The soil composition is schist and clay, an ideal combination for Treixadura, Godello, and Loureira vines.

 

The winemaker placed emphasis on soil health and microbiology to ensure robust plant growth in the vineyard. Practices include minimal use of phytosanitary products and certified organic agriculture products. No organic herbicides or insecticides were used.

 

The 2021 vintage yielded good quality grapes with low fungal pressure. It was an unusually dry spring and summer with cooler temperatures in August, which affected the alcohol content.

 

Bitoku underwent an 18-hour maceration, with gentle pressing, and spontaneous fermentation.

Fermentation was maintained at 15ºC in stainless steel tanks. The wine was bottled in March.

 

The name, Bitoku, comes from the Japanese Koi carp in the estate's pond, and symbolizes virtues and the winemaker's journey. Bitoku represents the seven virtues of Bushido, which is integral to the winemaking process.

 

Here's a taste of what you can expect from this wine:

  • Aroma: White fruit, pear, herbaceous, fennel, floral, and aniseed notes.
  • Palate: Fresh and clean tasting, with hints of green apple and herbs. A varied palate that leaves a slightly bitter finish at the end. 
  • Serving Temperature: 7-10 ºC
