El Ripio is a sparkling white brut nature wine that is also organic and natural. It is additive free, unfiltered and has no added sulphites. It is made from macabeo grapes, using the ancestral method; fermentation with native yeasts in the bottle for at least 12 months. This wine is produced on the farm and aged in an underground cellar, away from climatic variations.
In the glass this wine looks a little cloudy due to the fact that it is unfiltered. The aromas are very mineral, with nuances of green apple. In the mouth the bubbles are fine and elegant and there is a surprising salinity to it, without forgetting the green fruit flavours. It is a delightful sparkling wine.
This wine is best enjoyed at temperatures below 6ºC. Due to its slight salinity, it pairs well with all kinds of seafood.
