Selva Vins is the personal project of veteran Mallorcan winemaker Carlos Rodriguez Furthmann. His small winery is located in the Sierra Norte region of Mallorca. His artisan wines are created using minimum manipulation and he also prioritises the use of indigenous grape varieties.
Giró Ros is a native Mallorcan grape variety. The winemaking process involves spontaneous fermentation and a small part has had 22 days skin contact. The wine is kept on its fine lees for three months. Afterwards, the wine is transferred to a 400-litre used chestnut barrel for a brief spell. Nothing is added to the wine except a minimal amount of sulphite. The wine is not filtered or clarified.
Selva Vins was the first winery in Mallorca and the Balearic Islands to make a 100% Giró Ros wine with spontaneous fermentation and minimal intervention.
Production: 500 bottles.
TASTING NOTES
- Palate: Toasted almonds, peach, honey, quince, tea, dried flowers, orange peel, lemon peel, grapefruit, lemon verbena, and white pepper can be recalled when tasting this wine. It is also creamy, intense, long, and complex.
- Pairing: Pair this wine with grilled and steamed mussels, cod, vegetable stew, lamb, goat, roast ham, and escalivada. This wine will pair well with dishes that include mustard sauce, yogurt, roasted apple, curry, figs, cinnamon, nuts, dried fruits, ginger, and caramelized onion.
